Is everyone having an Easter Egg? I will probably have a small one and get myself a treat of something else too. For Mothers Day I got two Dragons Eggs. The dragons are cute and I have named them after my boys. I need some different dragons eggs for Easter!
hell yes!
I'll be injecting a little more novorapid and treating.
.... and in case anyone wants to tell me its wrong to do that, I know and I don't care :)
Rules are like pie crust, made to be broken.
If we didn't break or bend the rules from time to time, we'd all go crazy. We all need a treat from time to time too, it's good for us.
I am having a break with a cup of coffee complete with real sugar as I've spent the best part of the afternoon cleaning the kitchen and getting rid of stuff well past its sell and use by dates.
We are here at Good Friday, and I am disgusted. I went out to get proper hot cross buns and the bakers was shut!
No easter eggs in the house for me at all.
No hot cross buns either.
Keeping well away from tempation and having a healthy easter.
Better late than never :)
As always, adapt as necessary. The same recipe without the spices and dried fruits, makes great bread cakes, or with sweeter, Tea Cakes. Supt to you to play around with the sugar component to get it right for you. A little grated Dark chocolate works well too. If you can get fresh yeast - I envy you :)
Hot Cross Buns
2 teaspoons dried yeast
2 oz caster sugar
12 oz warm milk
2 lb plain flour
2 teaspoons mixed spice
2 teaspoons ground cinnamon
2 oz butter, melted
2 tablespoons olive oil
1 egg
3 oz caster sugar, extra
4 oz sultanas
Crosses
4 oz cup plain flour
3 oz water
glaze
2 tablespoons sugar
1 teaspoon gelatine
2 tablespoons water
Place yeast, sugar and milk in a large bowl and set aside for 5 minutes. The mixture should start to foam. Add to the mixture the flour, spices, butter, oil, egg, extra sugar and dried fruit. Mix to combine.
Turn dough out to a floured board and knead for 5-10 minutes or until the dough feels smooth and elastic. Place the dough in an oiled bowl and cover. Place in a warm spot and leave for 30 minutes or until doubled in bulk.
Turn out dough and lightly knead. Divide dough into 12 balls and place in a greased 23cm square cake tin. Cover and sit in a warm place until doubled in size. Preheat oven to 200 C/Gas Mark 6. Mix together the flour and water for crosses and place in a piping bag or plastic bag with the corner snipped. Pipe crosses on buns. Place in oven and bake for 20 minutes or until golden and springy to touch.
Meanwhile place the sugar, gelatine and water in a saucepan and stir over medium heat for 2 minutes or until gelatine has dissolved. Brush warm buns with glaze.
Dray
The kids got Easter Eggs. WHile I was shopping I bought the other half (AKA The SIlly Old Sod) a couple of CDs and a pack of speciality bacon.
I did get my Hot Cross Buns
while shopping, but I am having a busy weekend catching up on chores and keeping warm because we had snow.
Of course, we can always claim that hot cross buns are good for diabetics because of the cinnamon ;)
Thanks for the recipe Dray, I'll give it a try.
Ooh! forgot that about the cinnamon ;)
My Bear made them this year, with that recipe, no holds barred, (usually me, tiddling about with the recipe) and they took over our oven.
(sigh) Guess I'll be forced to eat them bit by painful bit now. The things we have to do for love....
Speciality bacon? Speciality BACON !? Some blokes have all the luck. All I get is prescription drugs and rock-and-roll :)
I give him a tough time, but he is not a bad SOS! Not bad considering Iam a vegetarian too.
